Ingredients
2 garlic cloves, finely minced
1 large egg yolk
1/2 tsp Dijon mustard
1 tsp lemon juice
120 ml (1/2 cup) olive oil
Salt and pepper, to taste
How Do You Make It?
Prepare the Base: In a medium bowl, whisk the egg yolk, mustard, and lemon juice until smooth.
Add the Oil Gradually: While continuously whisking, slowly drizzle in the olive oil, adding a few drops at a time at first. Continue until the mixture thickens and emulsifies.
Add Garlic and Season: Stir in the minced garlic. Season with salt and pepper to taste.
Adjust Consistency: For a thinner aioli, whisk in a bit of water or extra lemon juice.
Tips & Tricks
Room Temperature Ingredients: Use room-temperature ingredients to help emulsify smoothly.
Blend it: For a quicker aioli, use an immersion blender.
