Ingredients
3 ripe bananas, mashed
125 g (1/2 cup) unsalted butter, melted
200 g (1 cup) granulated sugar
2 large eggs, beaten
1 tsp vanilla extract
1 tsp baking soda
1/4 tsp salt
190 g (1 1/2 cups) all-purpose flour
60 g (1/2 cup) chopped walnuts or pecans (optional)
1/2 tsp ground cinnamon (optional)
How Do You Cook It?
Preheat the oven: Set your oven to 175°C / 350°F and grease a 9x5 inch (23x13 cm) loaf pan, or line it with parchment paper.
Mash the bananas: In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth.
Combine wet ingredients: Add the melted butter, sugar, beaten eggs, and vanilla extract to the mashed bananas. Mix until well combined.
Incorporate dry ingredients: Sprinkle the baking soda and salt over the wet mixture, then gently fold in the flour. If using, add the chopped nuts and ground cinnamon at this stage.
Mix gently: Stir the mixture just until the flour disappears. Overmixing can result in a dense banana bread and you want it moist.
Pour into pan: Pour the batter into the prepared loaf pan, spreading it evenly.
Bake: Place in the preheated oven and bake for 60 minutes, or until a toothpick inserted into the centre comes out clean.
Cool: Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Ripe bananas: Use bananas that are heavily spotted or almost black for the sweetest and most flavourful banana bread.
